Spicy Shrimp Tacos & Jalapeno Couscous

Like I've said before, Chris loves spicy and I love to deliver. This recipe is super easy, delicious, and allows for customization. Here's what you need - 

For the shrimp:
1 lb fresh de-veined shrimp
1 tsp cayanne pepper
1/2 tsp red pepper flakes
butter
2 cloves garlic (minced)
salt & pepper 

For the couscous:
1 cup couscous (I used chicken stock instead of water for more flavor)
2 jalapenos
1/2 red onion
EVOO
garlic salt & pepper

Additional ingredients:
Flour tortillas (small)
Cilantro
Sour cream
red onion
avocado
lime 
tomatoes 

To start, clean off the shrimp, remove the shells, and chop up into smaller pieces. Place the shrimp in a bowl and season with the cayanne pepper, red pepper flakes, salt & pepper. 

Heat a medium-large saucepan over medium heat. Add 1/2 tbsp of butter. Wait a minute for the butter to warm up, and then add the garlic and shrimp. Cook the shrimp until they're pink in color. Remove from heat and set aside. 

For the couscous, cook the couscous based on package instructions. Also please note that when cooking, don't try to do anything else. Couscous can quickly burn on the bottom so you should be paying attention at all times - yes I'm speaking from experience. While the couscous is cooking, saute chopped jalapenos and onion in a saucepan with a little bit of olive oil, garlic salt and pepper until they soften. Mix it together with the couscous once it's finished cooking, and there you have it!

Okay now I mentioned customization, so here's where you can get creative. If you're rushed for time like we were, you can simply top your shrimp will of the ingredients listed (or just the ones you want!). Also, feel free to add some cheese as well, I used a Monterey Jack/Cheddar combo that went well with everything. If you have more time to kill then I would recommend using a blender and blending together some sour cream, chopped cilantro, avocado, lime, and maybe even some chopped tomatoes. This will make a great topping, and will be a little less messy than if you were to just add everything on top. Regardless, this is a quick and easy dinner that's simply delicious!
